Happy Memorial Day!
Well folks, I am back from the Keys 🙂 I was lucky enough to get in a warmer than normal 6 mile run while I was there. I ran from “coast to coast,” one side of the island to the other, and it was about 1.25 miles long, haha. I just ran back and forth down different roads with a few off shoots along the way 🙂 I don’t have many pictures from this weekend, so it might be a while before I have a full Bachelorette recap, but it will happen my friends. Here’s a quick glance…
My run today was pretty good. Last night I decided to do 4 x 1200 at tempo pace. As I started my first tempo I went out too fast as normal, but it felt almost easy. That’s pretty normal for me so I figured I’d wait to see how I felt during the second tempo… that wasn’t too hard either. After my third tempo it came to me… I don’t do 1200’s at tempo pace! That’s too short for a tempo. So I decided to add two more 1200’s and keep the pace below 6:40 and call it a tempo/interval hybrid. I guess my mind was still in Key West mode when I planned that run, haha.
The temp was only 70 degrees, the humidity was 77 and it was cloudy. In comparison to past workouts, I had pretty nice weather. I felt strong during all 6-1200’s and my breathing was great. My hammies and knee both felt good, too! Since today is the last day of the 50 cent Slurpees, we stopped at 7-11 on our way home for some deliciousness!
Todd had the day off from work, so we had a lazy morning (after our early morning run that is), enjoying our blueberry pancakes and taking our time stretching. We took Riley to her favorite spot in Carrollwood for a walk and by the time we got back and showered it was time for me to make lunch. Remember how I wanted to create a healthier version of Lo Mien? Well I did 🙂
It was actually REALLY good! Since I just got back, our fridge was a little empty so I added what we had- broccoli, flank steak, scallions. Next time I’ll use cabbage, celery and mushrooms instead of the broccoli and make more sauce. Here is the recipe for the sauce:
1/4 cup low sodium chicken broth
1/4 cup soy sauce
2 tsps rice vinegar
2 tsps sesame oil
1 tsp hot pepper flakes optional
1 tsp sugar
If you want it a little thick, add 1 tsp corn starch
This was a big hit with both Todd and I. You should definitively try it! I decided today was an extension of Todd’s Birthday so I’m also making him fajitas (one of his faves) for dinner. And since The Big Bang Theory is one of our favorite shows, I also got him this Bazinga! shirt for his BDay 🙂 I’m so romantic- Ha!
