Still trucking, or should I say slugging, away at my rest week.

Let me start off by saying I’m a total fan of regular pancakes. I personally think pancakes are supposed to be made of carbohydrates and are meant to be light and fluffy and bread like. However, I wanted to experiment and delve into the world of protein pancakes. After lifting weights on Thursday, I came home and tried my hand at it. I came across an easy recipe HERE, but modified it a bit, to look like this:

  • 1 scoop vanilla Protein Powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. cinnamon
  • splach of vanilla extract
  • dash of salt
  • 1/3 c egg beaters egg whites
  • 1 Tbsp. Almond Milk

Well my friends, this came out WAY to runny. Most likely it was from the egg whites not coming from actual eggs, but from the equivalent amount of egg white beaters in the original recipe, so who knows… I added another half scoop of protein powder and it was thick enough to pour… kind of, haha…

IMAG0953The puffyness did not compensate for the spongy texture 🙁 They looked like decent tasting pancakes, but don’t let that fool you! The texture was horrible and almost made a squeaky sounds when chewing. The flavor was actually OK. The best way I can describe it is to think of cinnamon vanilla sponges. Yummo Oh! Right? Ehhh not so much.

IMAG0954After getting through one plain pancake, I tried to jazz one up with jam. Nope, didn’t work. Let’s just say the trash ate the third one. And that says a lot, because Heather doesn’t throw food away. Next time, I think I’ll either a) stick with my regular pancakes or b) try a recipe that had some soft of flour in it. On a happier note, good thing I had my Godiva Chocolate of the month to come to the rescue in the tasty department 🙂

GodivaThis month I chose Pistachio. It was SO good! The center was like an airy pistachio mousse. Definitely a good choice.

And real quick, I just have to say HAPPY BIRTHDAY to my amazing Dad!

      Your hubby is a Body Builder right? He’s probably got the protein pancakes down to a T. I’d love a basic recipe! THanks girl!

  1. I make super easy protein pancakes by just blending a banana and an egg. No protein powder but they’re super fluffy and I love eating them post-workout! Sometimes I add some vanilla or cinnamon to the batter for extra flavor.

  2. I have had so many pancake fails. I swear it depends on the day, how much sleep I’ve had, the humidity, which flour, how old my bananas are… sure, sure, excuses, excuses! I’ve started to just ‘eyeball’ my ingredients instead of measuring out, and it is amazing how there are great successes, or even in the same batch, I had a few really rise and some were just so flat – and I did mix my batter up. Oh well, I still eat all my flops.
