Monday: 4 miles @ 8:30 pace on treadmill/ Body Pump
Everything felt A-Okay after my long run Sunday. My glute wasn’t any more “off” than normal. I had the pleasure of bringing a date to BP… my dad! Made my day 🙂
Tuesday: 6 miles @ 8:20 pace on treadmill/ Pilates
I ran right after Pilates and I think that was a good call because my glute and hammies were nice and loose!
There have been some tasty eats in my life lately! Other than the boat load of sushi I consumed on Sunday, let’s see what else I’ve been enjoying…
OBVIOUSLY pancakes! I had a nice stack of banana cakes on Monday. I was pretty hungry and tore a piece off before snapping a pic.
Nine times out of ten, I use the Hodgson Mill Whole Wheat Insta-Bake mix. The ingredient list is short and the stats are pretty good.
Using 3/4 cup of the mix, 1/4 cup egg beaters and 1/3-1/2 cup milk gives me a nice big 3 pancake portion for just over 350 calories. I’ll take it! The other one out of ten times (and every time for Todd) I use the Bisquick Heart Healthy mix. While I love white carbs, if it’s something I’m having multiple times a week, like I do pancakes when I’m training, I want them to be quality. And I’m sure you’re asking why I don’t just make my own mix… well, sometimes I do, but this is just so much easier, haha. So there’s your answer… I’m lazy.
I’d rather spend my time whipping up some fish tacos like I did last week. They were so good!
These were quick and easy and FULL of flavor. Inside the tortilla: sauteed tilapia seasoned with Old Bay, a tomato and red onion “salsa”, lettuce and a sauce of greek yogurt mixed with lime juice, cayenne pepper, cumin and Old Bay. Yummo!
Another easy peasy dinner was BLT’s. Turkey BLT’s to be exact.
Real bacon definitely has it’s place, but when you’re putting bacon in a sammie and the flavor isn’t standing alone, turkey bacon does the trick with less saturated fat and calories. I like the Butterball brand.
The instructions say to either microwave it or pan fry it, but I’ve found it comes out best when baked on a wire rack in a 400 degree oven for 10-15 min, flipping half way through. The pieces shrink down, but not THAT much, so for 100 calories you can have 4, yes 4, good size slices of turkey bacon on one BLT. Not too shabby!
I’ve been having a few too many handfuls of these little ladies lately…
Can you blame me? Right along the same lines, I’ve been topping my peanut butter with chocolate chips for an after dinner treat 🙂 I can’t be eating espresso beans before bed now can I?!
And of course, no good Tasty post would be complete without Froyo! Especially when it is consumed while watching the season premier of Ducky Dynasty.
Don’t worry… this wasn’t the only froyo I ate last week. There were at least 2, okay 3 other times 🙂
