No Bake Chocolate Eclair
Wednesday: 6 miles @ 8:20 pace on treadmill/ Body Pump
Thursday: 10 miles @ 8:14 pace on trail
The humidity was down to 85%, so it was actually bearable out this morning, haha, and I had a nice little run. I saw my sister biking, too! I felt my glute the whole time, but again, nothing hurt, it just made itself present. I wanted to keep my pace between 8:10-20 so I was happy with my 8:14. I ran the last mile or so around a 7:00 pace, just to get my legs turning over a bit. It felt good 🙂
Tonight I am going to another girls night and I am on dessert duty. I’ve been seeing recipes for this No Bake Chocolate Eclair and I wanted to give it a go. It was really easy to prepare, but didn’t come out quite as I wanted. The original directions said to pour the chocolate topping on while it was still hot/warm so that’s what I did. It was way too liquidy though and ended up spilling more on the sides than the top 🙁
Don’t mind the bite taken out of it 😉 There are a ton of recipes for this, but here is my take:
2 (3.5 oz.) boxes french vanilla instant pudding
3 c. milk
1 (8 oz.) container Cool Whip
22ish Graham crackers
1/3 c. cocoa
1 c. sugar
1/4 c. milk
1 stick (1/2 c.) butter
1 tsp. vanilla
For the filling:
1. Combine pudding mix and milk; beat. Stir in Cool Whip.
2. Place a layer of graham crackers in the bottom of a 9×13″ dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers.
For the topping:
1. Bring cocoa, milk, and sugar to a full rolling boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted.
2. Pour cooled chocolate topping over the top layer of graham crackers.
3. Refrigerate over night.
Obviously from the picture above, I had a hard time waiting until overnight, but whateve! I even let Todd sample it when he got home from work. We both think it tasted pretty darn good! However, if I make it again, I will use the same amount of ingredients in a 8×8 or 9×9 dish. Here is what it looks like in the original recipe picture:
Mine was not tall and the topping is nothing like that. Like I said, it tastes awesome, just doesn’t look it:
