Peanut Butter Chocolate Chip Cookies!


Friday: 10 miles @ 8:01 pace on trail

Let me just start off by saying that I am WAY too into running, haha. I saw my sister about 6 miles into my run and she said she nailed her run (2 x 15min at marathon pace). She had the biggest smile on her face and it really pumped me up! So much so, that I negative split my run from an 8:08 average pace when I saw her, to an 8:01 avg pace in the end. Who get’s a runner’s high off of someone ELSE’s awesome run?! This girl.


Just typing out the title of this posts makes me want to make more of these uber delicious cookies! Kristin had to miss Todd’s going away dinner at my parents because of work, and being the amazing sister-in-law she is to Todd, she wanted to make it up to him. We all know the way to a guys heart is through his stomach, so she whipped up a batch of her famous PB and chocolate chip cookie dough and brought it over…

IMAG1244Nothing is better than raw cookie dough with hot coffee to wash it down! Mmm mmm MmMm! Todd doesn’t understand my obsession with dough/batter. I like it just as much, if not more, than the actual baked product, haha. Bringing over raw dough is a risky endeavour in the WInchell household, but making these cookies fresh was JUST what Todd needed. We even put a bit of jelly in the center of a few to see if we could make PB&J Chocolate Chip cookies…

IMAG1245Oh my gosh, these were so Freakin Good! Here’s the recipe in case YOU want to impress someone with warm delicious amazing cookies:


1/2 cup peanut butter
1/2 cup butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tablespoons light corn syrup
2 tablespoons water
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped semisweet chocolate

Mix wet ingredients. Mix dry ingredients. Then mix the wet and dry mixtures together. Drop heaping spoonfulls on a cookie sheet and bake at 375 degrees for 10-12 minutes. . Check for done-ness. Some people like them crispier, some doughier. Makes about 34 cookies, depending on how big you make them.

These cookies really are the bomb dot com. Trust me. And I love that Kristin did something special for Todd. Makes me happy they get along so well 🙂


Random Friday anecdote… so on my walk with Riley today, I entertained myself by playing the “step on a crack, break your mama’s back” game. Remember that silly saying? haha. Don’t worry Mom, I didn’t step on any cracks!!!
