Like I said at the beginning of the week… getting back into the grove of things on the workout/running front. No races lined up for the time being, so running is just for fun ๐Ÿ™‚

After a nice little run on the treadmill this morning, I had my usual post run breakfast-ย a nice big, warm bowl of oatmeal paired with some greek yogurt and Cafe Dumond. I stretched, did my 8 min abs video, and hung out with this little lady…

IMAG1543Gosh I love her! Todd and I missed her SO freakin much while we were gone. I’ve been spoiling her like crazy with multiple walks a day and extra treats and human food. Grandma (my mom), always dressed her food up with chicken jello, aka, the juices and drippings after roasting a chicken. So, when Ry got home and we fed her JUST her usual kibbles, she sat there and looked at them like, “guys, where’s the good stuff?” Our actual kids are never going to want to leave grandma/pa’s house, haha. Thanks mom, dad and Kris for taking care of our Dogter!

IMAG1542Riley likes to stretch after her walks, too! Smart dog. After my quite relaxing morning, I headed over to my parents to make almond butter and hang out with my sister to celebrate National Peanut Butter Day. I feel like there’s a “National Something Day” everyday, but I only like to acknowledge the best ones. I know AB isn’t PB, BUT they are both delicious nut butters and I’m not sure if there’s an AB day, sooooo ya. Plus, I really like Publix’s fresh ground peanut butter but am not as big of a fan of Wholefoods or Fresh Markets fresh ground AB, so I like to make the ABย and buy the PB. OK… that was a little too much info, but now you have the 411, haha.

First we roasted the almonds. Actually, first we went to BJ’s Wholesale to get almonds, free samples and a few other things. Put the almonds on a sheet pan, place in oven and set the temp to 350. Once the oven beeps that it’s pre-heated, remove almonds…

IMAG1544Put the slightly roasted almonds into a food processor, add a few pinches of salt and a tablespoon or so of vanilla, then blend away! Kristin found that if you add the vanilla in the beginning it comes out more creamy and liquidy… not liquidy like runny, more like easily spreadable. Adding the vanilla once the almonds are blended makes it kind of seize up and harder to spread.

IMAG1545The almonds are still hot/warm when you put them in, so make sure you take out the black thing in the picture above…

IMAG1549I should have timed how long we blended it for, but I’d say maybe every 5 minutes or so we scrapped the sides down. At first, it gets kind of flour like or mealie (spl?) but after 15 min (?) give or take a few minutes it looks like this…

IMAG1546Next comes my favorite part… putting it into jars and licking everything clean. The blade was SO HOT! I had to wait for it to cool a bit before “cleaning” it ๐Ÿ˜‰ We ended up with a good amount…

I’m sure it won’t last long, though. I have a slight addiction. Especially since it tastes like cookie dough. No, seriously. Just a splash of vanilla and salt really creates a great flavor. Try it! Days like today make me one happy camper… quality time with my dog in the AM, sister in the afternoon and Hubby in the PM. I even got to see my parents for a bit… have I ever told you how much I love my family? ๐Ÿ˜‰ Happy Weekend!

  2. Nice!! This looks amazing!!! I am definitely going to try it! I just bought a big bag of almonds at Costco!!! I might put a little chocolate in it too!! ๐Ÿ™‚ I found a recipe for vanilla espresso too!!
    I love all nut butters!! I like to have 3 or 4 at home at a time!!

    • Oh, YUM! Vanilla espresso!? I tried adding cocoa but it seized up, had to add extra oil. Bulk nuts are the only way to go. Makes them so much cheaper and the keep forever in the freezer- not that they last that long, haha.
