Thursday and Friday Eats

Work has been pretty slow for me lately, making this whole not running/exercising thing even harder. More time to think about how I’m not able to run and beautiful weather also aren’t helping my cause! Todd’s usual work schedule has changed to more of a night shift, which is kind of nice because the AM is when I crave running the most, but it means I’m alone at night. Don’t get me wrong, I LOVE having the mornings with him, making pancakes and walking Riley, but I miss him at dinner! He finally got to meet Ry and I’s friend Frankie…


As always, my friends and family have stepped up to the plate and have been keeping me busy. Thursday I had a dinner date with Melissa at Seasons 52. The restaurant is located right outside a mall and I did some retail therapy before dinner, which is very unlike me.


1 dress, 1 sweater, 2 shorts, 2 belts, shoes, 2 tank tops, 3 shirts

All of this for just under $120. I think that’s a pretty darn good deal! I’m such a bargain shopper. OK. Onto the food. I really like Seasons 52 because all the meals are portion controlled and pretty healthy. Gone are the days of being able to eat however much I want- one of my main struggles right now. I have the biggest stomach! We started off with the Spicy Chicken Chile Relleno with sun-dried tomatoes, goat cheese, spinach and pico de gallo. It was good, but not spicy at all. For our entrees we both ordered the Grilled Boneless Rainbow Trout with baby carrots, parsley roasted potatoes and grilled lemon. We both subbed our carrots for a veggie medley.


They offer “Mini Indulgences” for dessert, but who are we kidding? Those are just a HUGE tease and would probably make me mad when I’ve finished after 2 bites…

I love dining with someone who understands my predicament and lets me bitch about it, haha. We obviously had other things to talk about, but venting always helps 🙂

IMG_8371Thanks for a fun night Twin! On to Friday… The BF Ashley and her hubby Zach are official homeowners as of Thursday- woo hoo! Congrats! After Todd left for work Friday, I headed over to see the new place and help them unpack. I arrived with a bottle of wine for Ash and left with some Samoas for all my hard work… OK, so it wasn’t really hard work, but I took the cookies anyway 🙂


As if that wasn’t enough fun for one day, I swooped by the house to pick up Riley and head to my parents for dinner. My dad grilled up some steak while my mom and I (mainly my mom) put together a huge salad- spinach, spring mix, romaine, feta, cucumbers, red onion, tomatoes, peperoncini and roasted red peppers. Yummo!

IMAG1814The steak was cooked perfectly and topped with some sauteed mushrooms. This girl needs her iron! Dinner at the rents? Yes. Please. Topped off with a few Samoas from Ash for dessert and my weekend was off to a great start 🙂 Hope you had a great weekend!

  2. Staying busy is probably the best thing for you right now. You scored some great finds at the mall. Love the striped shirt and dress a lot! We’ll have to get together one evening. Maybe take a trip to Trader Joes 😉

  3. We went to a sushi place to celebrate Dan’s birthday! It was delicious!! Looks like you have been eating good!! Love samoas!! I have an awesome home-made “samoa” recipe!!
    Grilled corn on the cob is the BEST!!!

    • Homemade Samoas?! What what?! I see your next baking adventure 🙂
      I haven’t had sushi in THE LONGEST time! I can never have just one roll and since there’s no carb loading needing to be done over here, I’m hesitant to go, haha.

        We actually had sushi twice last weekend…delicious! Friday night I was like bring on the rice and soy sauce for tomorrows big work out!!
        I would have a difficult time just eating 1 roll too!! 🙂

  4. Hmmm… I guess the last restaurant I went to was Chili’s for happy hour a couple weeks ago. And before that a super tasty Mexican restaurant in town. We don’t go out to eat too often!
    I LOVE corn on the cob. Sometimes I cut it off the cob so it doesn’t get all stuck in my teeth as much though. So excited for summer corn season!

    • Mmmm Mexican, that’s Todd’s favorite. We hardly go out either. Unless it’s with friends or family, we usually just make fun stuff at the house.
      I can’t wait for juicy corn season either!
