Eats Lately… Gaining 15lbs

Well my friends, I had a doctors appointment yesterday and am pleased (?) to report that I have gained 15lbs in this baby making adventure. If you’re a new reader, no, I’m not pregnant, but I am TRYING to be. After the initial appointment where I learned I had to gain weight (and stop exercising), I’ve had to increase 5lbs by each appointment. Not gonna lie… the first five pounds were all pity pounds and gained from refined carbs and sugar in the form of bread, cookies, cupcakes and chocolate. The second five was a mix of “bad” and healthy foods and the last five were almost all healthy.

It wasn’t hard physically to gain the weight. Shoot- I’m not allowed/suppose to run so it’s not like I had to fuel my recovering muscles from all the calories being burned. It WAS hard mentally and you guys have been MORE than supportive on that front and have been awesome listening to me complain, haha. OK… onto the food.

My breakfasts are usually pretty simple. Nine times out of ten it’s some form of a green protein shake (powder, greek yogurt, cottage cheese) and oatmeal. Sometimes I like to mix it up with eggs and butternut squash or pancakes and turkey sausage, but that is mostly on the weekends.


Lunch is all over the place depending on where I am at the time. If I’m on the go or working it’s a sammie with veggies and fruit, if I’m home or with my sister we concoct something fun. I like to get a good mix of protein, carbs, fat and veggies- fruit as “dessert” or a snack. We made this pretty good broccoli cheddar soup with tofu the other day and while it wasn’t like Panera’s Cheddar Broc soup, it was still rather delish! Chicken fingers with green beans and a sweet potato. Spaghetti squash with ground turkey meat sauce, brussel sprouts and butternut squash.


Dinner WAS more carb heavy while I was trying to gain weight, but now I have a higher portion of veggies and meat. Rice bowls below are popular in our house because pretty much anything tastes good on rice, haha. Now, most of my rice bowls are on top of lettuce.

And in celebrating Cinco de Mayo, we had fajitas… mine as a salad and Todd’s in tortillas- topped with sour cream, salsa and cheese. Don’t worry, I had a few bites of his REAL fajitas. So. Good. (The Dos Equis was Todd’s. I hate beer.)


Dessert is in the form of peanut butter or almond butter scooped out of the jar with dark chocolate chips on top- every night. PLUS some form of frozen yogurt, a muffin, the occasional smore or left over treat from a holiday or party. I do love me some dessert 🙂

  1. Looks like you are eating good!!! Congrats on the 15lbs. You will be pregnant in no time!! 🙂
    I love breakfast. I love pancakes and eggs. We made a pumpkin oatmeal the other day that was delicious!
    My go-to dessert (at the moment): is ice cream and cookies. It changes about every months!! 🙂

    • That’s what I’m hoping… lbs=baby machine! Mmm Pumpkin oatmeal is one of my faves, too! So happy you’re not a fall only pumpkin eater 🙂

  2. It’s so nice to be able to keep up with you in all facets of life! You really could turn this into a food blog while you are taking time off from running, all those meals look delish! Sending positive thoughts your way for a happy and healthy baby making process!

    • Thanks girl! I’d need to take better food pics to turn this into a food blog, haha. I just use my phone now and none of them are pretty… have you seen some of those dated bowls, haha!

    • Determined I am! As my sis says, If this was marathon training I’d give it my all and shut up buttercup when things got tough, so that’s what I’m doing. Thanks for the congrats, haha. So weird, I know.
