WIAW: An Opening Shift

Monday: 30 minutes on stationary bike/ Body Pump

Tuesday: 4 miles @ 9:15 pace outside/ Pilates

Wednesday: Rest

Here’s another What I Ate Wednesday (WIAW) for you! Thanks to Jenn for hosting the foodie party! Today I’m highlighting what I eat on a day that I open at work. The stores hours are 10-7 during the week and I get there at 9:45AM to open the store and get everything ready. This means I have to leave around 9/9:15. Some mornings I’ll run before work, but on this particular day I didn’t. I “slept in” until 7:15 and brewed a pot of joe! I’ve been doing half Cafe Du Monde chicory coffee, half decaf to minimize my caffeine, but still enjoy my beloved coffee.

Chicory and Decaf coffee

After two cups of coffee, watching the news and browsing the web, I took Ry for a quick walk and showered off before having two eggs on a piece of toast and another cup of coffee ๐Ÿ™‚

Once I got in, I had a oatmeal in an almond butter jar made with 1/3 cup of oats, 2/3 cup almond milk and about a tablespoon or so of AB left in the jar.

AB Oatmeal JarIt was a slow day and I grabbed my snack early. Some kettle corn popcorn and lightly saltedย peanuts. Sweet and salty.

ย My snack and lunch pictures were taken at home before I packed everything up. After my snack and a few customers later, I had lunch…

Plum, Fage, Bulgar Work veggies

A plum, 2 % Fage Greek yogurt, 1 cup cooked Bulgar wheat and zucchini/squash and green beans as veggie sides. A well balanced meal ๐Ÿ™‚ But no meal is complete without dessert…

Pumpkin DlitesI met Ashley up for a DLites date after work for some delicious Pumpkin Pie ice cream! Yes that’s a large. Fun fact- I always get three flavors when I go here, so I also got chocolate and espresso. I sat in traffic on the way home thinking about what to make for dinner. I decided on something chicken…

Chicken Marsala and greens

I whipped upย chicken marsala withย mushrooms. Mine was over asparagus and collard greens and Todd’s was over rice. Again, I’ve got to have some kind of dessert, so I went with a nut butter combo shot glass. I don’t think I’ve told you guys about the Trader Joe’s cashew butter I recently found. It’s uber delicious and I love mixing it with their almond butter. Just a bit of the AB adds a nice texture and saltiness to the cashew butter.

Do you have to have a dessert after every meal?

  1. Yum on the pumpkin ice cream! I love pumpkin anything! Your chicken marsala looks amazing! My husband would love that, do you have a recipe that you use?

    • No recipe really. I just sautee the chicken (I don’t flour it or anything, just season with s&p, and tyme) take it out and sautee the mushrooms. I add equal parts (1/4-1/2 c) Marsala Wine and chicken broth, add chicken back in and let it simmer in the sauce until it reduces a bit. I think most recipes add onions with the mushrooms. Anywho… you should make it for your hubby!
