Here’s another What I Ate Wednesday (WIAW) for you! Thanks to Jenn for hosting the foodie party! Today I’m highlighting what I eat on a day that I open at work. The stores hours are 10-7 during the week and I get there at 9:45AM to open the store and get everything ready. This means I have to leave around 9/9:15. Some mornings I’ll run before work, but on this particular day I didn’t. I “slept in” until 7:15 and brewed a pot of joe! I’ve been doing half Cafe Du Monde chicory coffee, half decaf to minimize my caffeine, but still enjoy my beloved coffee.

After two cups of coffee, watching the news and browsing the web, I took Ry for a quick walk and showered off before having two eggs on a piece of toast and another cup of coffee ๐Ÿ™‚

Once I got in, I had a oatmeal in an almond butter jar made with 1/3 cup of oats, 2/3 cup almond milk and about a tablespoon or so of AB left in the jar.

Chicken Marsala and greens

I whipped upย chicken marsala withย mushrooms. Mine was over asparagus and collard greens and Todd’s was over rice. Again, I’ve got to have some kind of dessert, so I went with a nut butter combo shot glass. I don’t think I’ve told you guys about the Trader Joe’s cashew butter I recently found. It’s uber delicious and I love mixing it with their almond butter. Just a bit of the AB adds a nice texture and saltiness to the cashew butter.

Do you have to have a dessert after every meal?

  1. Yum on the pumpkin ice cream! I love pumpkin anything! Your chicken marsala looks amazing! My husband would love that, do you have a recipe that you use?

    • No recipe really. I just sautee the chicken (I don’t flour it or anything, just season with s&p, and tyme) take it out and sautee the mushrooms. I add equal parts (1/4-1/2 c) Marsala Wine and chicken broth, add chicken back in and let it simmer in the sauce until it reduces a bit. I think most recipes add onions with the mushrooms. Anywho… you should make it for your hubby!
