WIAW: A WHOLE Chicken in the Crock Pot

It’s definitely thinner than regular egg nog, but is also only 50 calories and 8g sugar for 1/4 cup instead of 150. I’ve been enjoying it in my coffee in the mornings and at night with my nut butter 🙂

7:30 AM A new to me flavor of greek yogurt. Not too shabby, but I like my mom’s cranberry sauce in Fage 2% better. Not to self (or mom) make more cranberry sauce!

9:00 AM After a meeting from 8-9, I was MORE than ready for my zoatmeal in a pb jar. 1/2 c old fashioned oats, 1/3ish cup grated zucchini, shake of stevia, 1 c almond milk, dash of pumpkin pie spice. Microwave for 5 minutes on 50% power in a bowl, transfer to pb jar and take to work.


12:45 PM Romaine lettuce and spinach salad with a can of tuna, roasted red peppers, banana peppers, olives, cucumbers and Bolthouse Farms Cilantro and Avocado Yogurt dressing. I’ve been digging their new line of yogurt dressings! The Blue Cheese one is really good, too!


And a sweet potato on the side for good measure.

3:30 PM Peanuts and more water.


4:30 PM An apple on the car ride home as my pre run fuel.

The weather was pretty cool last week and it made for some GREAT running! It’s not very often in Florida that one can get off of work and the weather be so nice that they WANT to run outside. I mean, it was cool with no humidity. I can NEVER run outside and my hair still end up straight and not in a huge rats nest mess. It’s amazing at what cooler running can do to your paces, too…


6:30 PM Dinner was a whole chicken that I made in the crockpot using THIS RECIPE. It was so darn easy and delicious! Left us with plenty of left overs and Riley enjoyed it, too!


With our chicken, we had rice, green beans and tomatoes topped with Parmesan cheese then broiled. After a run in the evening, I like to make sure I have a good mix of carbs, protein and veggies.

8:00 PM Nut butter time! This was another combo glass with TJ’s almond and cashew butters, along with my homemade AB.

    • Totally applicable. I haven’t washed my hair in four days. Not gonna lie, it’s getting a little gross, but if I don’t run, I don’t feel the need to wash it 🙂
