A New Cake And Riley got LUCKY!
This past weekend was the last of the birthday season for the Schroeder/Winchell households. We celebrated Rich’s birthday Sunday with late lunch of steak, salad (pear/walnut/gorgonzola), asparagus and roasted potatoes. Everything was delicious!
Regular readers of this blog know that for birthdays, my mom always makes a special dessert. A few years back, her chocolate cheesecake was all the rage, but the
tides taste buds have turned to cake! The past few years, it’s been a version of her chocolate cake with chocolate icing. Sometimes it’s peanut butter frosting, sometimes it’s a German Chocolate cake. My sister changed things up this year with a toffee butter cake. Rich made a complete switch to a cookies and cream cake. AKA All vanilla. I was a little skeptical, but it was awesome. My mom did the same icing as the chocolate kind, except used white chocolate chips. Brilliant. She layered crushed Oreos in between the layers and on top.
I know my mom would want everyone to know that the cake didn’t come out looking the best. I say looking, because it tasted awesome. She used the same cake recipe as the butter toffee cake but we think since the weather was uber humid that played a role in it not rising.
Speaking of rising… guess who was allowed on our bed this weekend?
^This girl^ Riley is NEVER allowed on our bed. She’s 60 lbs and sharing a bed with her would be annoying. We didn’t want to start a habit that we couldn’t stop, so we never let her on the bed… until this weekend. It was glorious, haha. We laid with her up there for a good 30 minutes. I’m pretty sure Todd fell asleep, but I just laid there, petting and rubbing Ry girls tummy 🙂
