It’s questionable whether or not a WIAW link up will be posted today, but in the spirit of the food party, I figured I’d do an unconventional WIAW with some random eats and treats.
Let’s start out with Sunday Family dinner at my parents. This was similar to a dinner a few weeks ago, but it’s baked chicken, green beans and roasted cabbage, onions and carrots.
My poor little dogter has been sick 🙁 She woke up two nights in a row with diarrhea (luckily she made it outside before going!) and threw up twice (on our brand new carpet). I was sent to THIS WEBSITE by a co-worker about certain foods that might help, so I made Ry Girl a yummy dinner of: 1/2 c WHITE rice, 1/2 c BOILED chicken, 1/2 c water, 1/4 c pumpkin. She freakin LOVED it and didn’t have any diarrhea that night! Maybe it’s a coincidence, but who knows?!
I really like this new to me La Croix flavor! I “stole” it from my parents on Sunday. And this Guava Goddess Kombucha- so good! I also tried the Cranberry one and it was just OK.
I saw these cut up veggies (mushrooms, onion, tri color peppers) at Publix and thought it was a pretty good deal since they were fresh (not a fan of the particular veggies frozen), pre chopped and $2.69/lb. Most peppers are more than that and while it looks like there’s a lot of mushrooms, that’s just on the top. Mom- is this a good deal?! Anyways, I sauteed it up with a chicken sausage and ate the whole package myself 🙂
I also tried my hand at a protein mug cake using the Summer Berry protein I got from MyProtein, which gave it a nice fruity flavor. It’s easy to make and packs a good amount of protein. Still don’t see what the huge fuss about these are though. Recipe below.
1.5 tbsp. coconut flour
1 tbsp. protein powder
1 tbsp. apple sauce
1/4 tsp. baking powder
2 tbsp. egg whites (about 1 large egg white)
1 tbsp. unsweetened vanilla almond milk
1/8 tsp. vanilla extract
Spray a microwave-safe mug with nonstick spray. Add flour, protein powder, baking powder, and sweetener if u wish. Mix well.
Add egg whites, almond milk, vanilla extract, and 2 tablespoons water. Stir until uniform.
Microwave for 1 minute and 15 seconds, or until set.
Nutrition: 125 cals, 16g protein
