Anti Grains= Who Knew?

Have you guys heard of Anti Grain? The company was started by a cute couple, Amanda and Jerry, and they make flours out of apples, butternut squash and sweet potatoes. WHAT?! How is that even possible? Well my friends, it is.


I reached out to them and they were kind enough to send me some samples of their product. Seriously though, how awesome are they… they sent me a HAND WRITTEN note and both signed it. You don’t see customer service like that anymore.

Anti GrainI perused their website for recipes and decided on the Quick and Easy Dark Chocolate Apple Cupcakes. I didn’t frost them, so there for they are muffins and not cupcakes, which means they are totally a breakfast item 🙂Anti Grain Chocolate MuffinsI added chocolate chips to the batter because, well, why not. They definitely had a spongier (probably not the right word, but close) texture, but were super yummy! Weirdly, I think they tasted even better when put in the fridge over night. I only made half a batch and got 8 out of it!

The next morning I attempted their Squash and Coconut Flour Pancakes and must have done something wrong.

Anti Grain PancakesMaybe because I added apple flour instead of coconut flour?! Maybe I put too much liquid? I tend to over pour… the batter tasted good and so did the “pancakes”, but they were not pretty and didn’t look like pancakes- so no picture. I don’t want to do them an injustice.

My fave recipe using the Anti-Grain flours is one I made up myself 🙂 Salmon Cakes. Todd loved them and has since asked for them several nights. Looks like I need to buy more canned salmon!

Salmon Cakes

14.75 oz canned Salmon
1 egg
1/2 cup Sweet Potato Flour + little less than 1 tsp baking powder
1 TBSP dried dill
1 tsp garlic powder
1 tsp onion powder

Mix everything together and shape into patties. I pan “fried” them with coconut oil spray, but you could actually fry them with coconut oil/canola oil/whatever oil you want.

I really want to try the break sticks and squash and sweet potato flour noodles, but I need to get some rice flour first! I’ll let you know how those turn out when I make them. I’m excited to experiment more and see what these flours can do! Hope everyone has a great weekend!
