WIAW: Succotash & Okra
Half way through the week my friends, half way through. Let’s celebrate with some food pics and ideas from around the web on Peas&Crayons!
6:45AM= Couple bites of cottage cheese right outta the container.
7:30AM= Fage 2% plain Greek Yogurt. I find if you let it come to room temp, it has more of a cheesy “flavor,” if that makes sense.
8:45AM= Zoatmeal– 1/2 cup old fashioned oatmeal, 1/4c each water and almond milk, 1/3 c grated zucchini, splash of cherry juice, cinnamon and grated nutmeg. Stir and microwave on 50% power for 5 minutes.
10:30AM= Banana with scoop of “desk almond butter.”
12:30PM= Was able to come home for lunch- Riley was a happy camper- and had a dippy egg with egg whites on the side, roasted butternut squash and some green bean fries.
Belly rubs for days!
3:15PM= Someone left a bunch of these Target Simply Balanced Fruit Bars in the break room so I snagged one for a snack.
4PM= More snacking. Half an avocado with salt sprinkled on top… can you believe they don’t have salt packets in our cafeteria? I guess it’s a good thing actually, haha, considering most people use too much salt.
After work I picked up Ry and headed to my parents for dinner. From Riley- “To Grandmother’s house we go!”
6:30PM= I still love going to my parents for dinner, even on week nights 🙂 We had roasted chicken, okra and succotash- all of which I love. A nice southern meal. My mom is a great cook!
9PM= I finished up the night with an almond, cashew, sunflower seed, peanut nut butter shot. Nom Nom.
