Highlights from Last Week
I went on a fun ice cream date with Stephanie, followed by a trip to Trader Joe’s and got a few new to me things and some staples. Organic produce: strawberries, sweet potatoes, cauliflower. Frozen: fried rice, mixed berries, corn dogs, wild caught sockeye salmon. Aged cheddar cheese, pretzel bagels. Things already consumed… strawberries and pretzel bagel on the car ride home- both delicious- and cheese once I got home- also very good!
My favorite grocery store, Publix, has these stations in each store that make meals for people to sample and then has all the ingredients right there to buy if you like it. Well, I tried a yummy pork recipe the other day and made it this week. Creamy Horseradish Pork with Sauteed Brussels Sprouts. I made the brussels for me and green beans for Todd. I really liked the sauce!
Another fun meal I made this week was a cauliflower fried rice with broccoli slaw, carrots and mushrooms and chicken on the side. Todd had the fried rice from TJ’s- of course I sampled it and it was very yummy! I forgot to take a pic before I started eating, but here’s a shot mid meal…
I’ve been cleared by the doc to bike ride, now, too! While it’s still not running, at least it’s another thing to keep me active. Oh… and I got a Fit Bit. Any one else use one?
I had THE BEST asiago cheese bagel at work. It was from Einstein Brothers and was just barely cooked so it was nice and doughy. MMmmm I love carbs!
My friend Melissa had another figure competition this weekend and I went to cheer her on. They get sprayed SO TAN for competition, it’s crazy. She puts in so much hard work and is so dedicated with her eating in preparation for the competition. I can’t imagine only eating protein and veggies and no sugar or carbs for any length of time. Good thing I’m into running 😉 She did awesome!
We celebrated my mom’s birthday Sunday. She requested fish tacos (cabbage slaw, tomatillo salsa, chipotle cream sauce) with corn and jicama salad for dinner. All homemade and all delicious. It was a good choice.
Yes, the season of cakes continues. She wanted an old recipe of my great grandma’s that has this very finicky icing. My sister was able to make the icing- essentially sugar, egg yolks and lemon juice/zest- but it didn’t make as much as we needed, so she whipped up a quick butter cream for the outside. It was very yummy and very sweet!
All of my posts these days are about food, haha. Sorry about that… Hopefully I’ll be able to get my creative juices flowing soon 🙂
