Highlights from Last Week

I went on a fun ice cream date with Stephanie, followed by a trip to Trader Joe’s and got a few new to me things and some staples. Organic produce: strawberries, sweet potatoes, cauliflower. Frozen: fried rice, mixed berries, corn dogs, wild caught sockeye salmon. Aged cheddar cheese, pretzel bagels. Things already consumed… strawberries and pretzel bagel on the car ride home- both delicious- and cheese once I got home- also very good!

TJs Goods

My favorite grocery store, Publix, has these stations in each store that make meals for people to sample and then has all the ingredients right there to buy if you like it. Well, I tried a yummy pork recipe the other day and made it this week. Creamy Horseradish Pork with Sauteed Brussels Sprouts.Β I made the brussels for me and green beans for Todd. I really liked the sauce!

Aprons Simple Meals

Another fun meal I made this week was a cauliflower fried rice with broccoli slaw, carrots and mushrooms and chicken on the side. Todd had the fried rice from TJ’s- of course I sampled it and it was very yummy! I forgot to take a pic before I started eating, but here’s a shot mid meal…

I’ve been cleared by the doc to bike ride, now, too! While it’s still not running, at least it’s another thing to keep me active. Oh… and I got a Fit Bit. Any one else use one?

I had THE BEST asiago cheese bagel at work. It was from Einstein Brothers and was just barely cooked so it was nice and doughy. MMmmm I love carbs!

My friend Melissa had another figure competition this weekend and I went to cheer her on. They get sprayed SO TAN for competition, it’s crazy. She puts in so much hard work and is so dedicated with her eating in preparation for the competition. I can’t imagine only eating protein and veggies and no sugar or carbs for any length of time. Good thing I’m into running πŸ˜‰ She did awesome!

Melissa Competition

We celebrated my mom’s birthday Sunday. She requested fish tacos (cabbage slaw, tomatillo salsa, chipotle cream sauce) with corn and jicama salad for dinner. All homemade and all delicious. It was a good choice.

Yes, the season of cakes continues. She wanted an old recipe of my great grandma’s that has this very finicky icing. My sister was able to make the icing- essentially sugar, egg yolks and lemon juice/zest- but it didn’t make as much as we needed, so she whipped up a quick butter cream for the outside. It was very yummy and very sweet!

  1. Yum – now this looks like my kind of cake! I’m much ore of a non-chocolate cake fan.
    Best thing i did this weekend was go to my Ladies Craft Beer event – we meet once a month and drink craft beer and do a craft. And this month’s craft I actually was able to do!
    And yes – I love my fitbit! I got the Charge HR and it’sreally keeping me conscious of my steps!

    • You would have liked my mom’s Mothers Day cake too, the lime coconut one- no chocolate there (unless you don’t like coconut- I can’t remember). The Craft Beer Event sounds so fun! I love get together’s like that. Glad you were able to do the craft! I’m hoping the fitbit will get me up a bit more with my desk job, so we’ll see πŸ™‚

    The fish tacos and pork dish look delicious…and I love brussel sprouts as well! And, I can’t imagine eating no carbs or sugar…I try to limit those things, but don’t cut anything out entirely.

  3. Those turkey corn dogs from TJ’s are staples in my house!! Your friend looks amazing, but wow, that tan….so tan….lol.

    • Ya, she was less tan last year and I was so surprised to see her that dark. They are all like that though. Guess it makes them look better on stage. Now I’m really excited about the corn dogs. If they are kid approved I am almost 100% likely to love them.

  5. I went to TJ’s yesterday to stock up too, it’s always exciting. That caaakkkkeeee. My weekend was nice, it’s been WHOA hot here (and by that I mean like 80-90 and humid) so I’ve been spending time outside.

    • The bagels are best either whole, warmed up in the micro (for a real pretzel taste) or toasted like a normal bagel with butter. Plain out of the package they are just OK.
