WIAW: Last Week

Welcome to another edition of What I Ate Wednesday!

Breakfast was a bit different this week. A yogurt parfait with Fage 2% yogurt, halved blueberries, diced up strawberries, puffed cereal and almond slivers. It was so good and filling!

A little after that I had peanut butter oatmeal. I KNOW! It’s not zoatmeal. I ran out of zucchini last week and had to make due without. Don’t worry though, the PB more than made up it 😉

Morning snack of an apple (organic of course- dirty dozen people).

For lunch, I had left over spaghetti and meatballs from my parents. Something about mom’s cooking is always better than your own! (half a meatball and a few bites of pasta were consumed pre picture…)

Afternoon snackage: peanuts and half an avocado. Plenty of healthy fats.

Dinner was a random hodge podge of stuff. Morningstar Chipotle Black Bean Burger (ketchup added after pic), an over easy egg, Trader Joe’s sweet potato tater tots and a few left over peas. Yes, all very random, but it filled my belly and tasted great.

Random DinnerFor dessert, I switched up the nut butter shot, to a chocolate frosting shot, with the left over frosting from Todd’s birthday cake.

Overall, a pretty yummy day of eats! Glad I was finally able to switch up my breakfast for you guys. I think I had the same thing during the work week for months! Hey if it ain’t broke don’t fix it right?! Happy Humpday 🙂

  1. I totally just clean everything out of my fridge and cabinet when I make salads for the week. That means everything from random veggies, to beans, to corn, to peas, to salsa and guac get added. And if I’m lucky, I have some left over hardboiled eggs. Although it sounds like salad overload the variety really keeps it from being boring! And I absolutely hate when food goes to waste. I refuse to go grocery shopping until everything in my fridge has been consumed.

    • I love your non-wasting ways! And those types of salads are THE best anywyays, they never get old. Hard boiled eggs are the best in salads!

  2. I appreciate your appreciation for the dirty dozen….because I know too many people that don’t care!! Some of these SAME people are all “must buy organic local meat” yet they give two shits about the produce..I’m like…uhhh?

    • Dare I say that I think the dirty dozen is worse for you than not eating organic grass feed meat?! I don’t know. Seems like I eat more produce than meat soooooo… keep on, keeping on!

    • The tater tots were pretty good. I should have rotated them more often so they crisped on more than one side, instead of almost burning, haha

  3. I like random dinners. 🙂 Favorite hodge podge meal is probably my salads. I just put the meat, cheese, eggs, veggies, or things from the refrigerator that look good on the salad. 🙂

  4. Ha Ha! I tend to eat the same thing every day – so if I did WIAW – it would be SO BORING! LMFAO!! Although I do eat some really weird “same” things all the time…. Unagi? Kama? Wild Boar? Mmmmm!
