WIAW: Back on Track

Happy What I Ate Wednesday everyone! After a few weeks of over indulging- expensive (delicious) lunch meetings, birthdays, and random sweet treats– I’ve gotten back on track to being able to just say no! when offered something unhealthy. Does this mean I’m cutting out carbs and sugar and all the yummy stuff? Ummm, no. BUT, I am making a better effort to limit my sugar. I’ve said it a few times lately, but I’m for real this time. I even passed up cupcakes in the break room yesterday afternoon. Boom.

BREAKFAST: Nothing new here. A yogurt parfait with 2% Fage Greek yogurt, slivered almonds, puffed rice cereal, and chopped up strawberries, blueberries and blackberries.

MORNING SNACK: After doing some fun research and an hour long morning meeting (had a cup of decaf coffee to keep me warm, the meeting rooms are always freezing!) I had a Berry Delight Nakd Bar. So good! I really like the fruit flavors from Nakd. Followed by an apple shortly after.

LUNCH: I brought food, but come lunch time, all I wanted was a salad, so I went to the cafe and grabbed one. Work salad goodness- spring mix, chicken, chick peas, olives, banana peppers, cucumbers, beets, carrots with a balsamic dressing. On the side, I had the butternut squash I brought. I always make two huge batches- one with cinnamon, one with rosemary.

AFTERNOON SNACK: One of my faves! PB&J baby! ALWAYS hits the spot. And a La Croix Peach-Pear sparkling water.

DINNER: Wild Alaskan Salmon was on sale at Publix for $7.99!!! That’s 50% off! You better believe I stocked up on it. Had it with a side of grilled asparagus and roasted baby potatoes. This is probably one of my top 5 fave dinners.

DESSERT: Nut butters are back on the list of things I want to eat- score! Nut butter shot with a side of whip 😉 I was being all fancy like. In the shot- peanut butter, cashew butter, sunflower seed butter.

  1. I don’t know what it is about banana peppers, but man do they take any sandwich or salad to the next level. I could actually eat them straight out of the jar. So good! Speaking of jar (well shot glass), nut butter & whip cream together? Man twin – you end the day with a bang 🙂

  2. Two weeks ago I felt like I was shoving anything and everything into my mouth that wasn’t nailed down. It’s so easy for me to just be like mmmm I ran so this 10,000 calorie piece of cake is okay… haha. But I feel like these last two weeks I’ve really focused on eating good, whole foods (with a few slip ups) and I feel a lot better – more energy, less stiffness after a run, etc. I need to try nut butter and whipped cream together. That sounds amazing!

    • YUP! Now that I can run (a whopping 4 miles haha) I give myself an excuse to eat worse. Ummm NO HEATHER. I always feel better when I eat better… the foods just so good 😉

    • Heck ya! It’s cheaper that way, too. The only problem… you can’t take that with you anywhere. Well, I guess you could if you want to get some interesting looks as you eat it, haha.
