Happy What I Ate Wednesday! Is it fall yet?!

Breakfast: I decided to switch things up and go the Fall route. After having pumpkin ice cream a few weeks ago, I decided to pull out the pumpkin. I mixed my Fage 2% Greek yogurt with pumpkin, pumpkin pie spice, riced cereal and slivered almonds. Pumpkin pie in a glass 🙂Pumpkin Yogurt

Snack: A delicious apple and half a Banana Nut Muffin Quest Bar.

Lunch: There was an important meeting and they put the leftovers in the break room, so I put my chicken and green beans back in the fridge and grabbed a free turkey, tomato and lettuce sammie to go along with my sweet potato fries.

Snack: Since lunch was pretty veggie void, I’m glad I brought green/red peppers and cucumbers.

I had a nice little run on the treadmill with my belly band when I got home from work 🙂 I love running. And that belly <3

Pre-Dinner: I found three random Trader Joe’s Pumpkin Ravioli in the back of the freezer, so I had those as an appetizer as I cooked dinner. Before I know it, these will be back on the shelf!Trader joe's Pumpkin Ravioli

Dinner: I whipped up a simple sauteed tomato, basil and balsamic chicken breast with green beans and asparagus.

Tomato Basil Chicken with veggiesDessert: The day just isn’t complete without a treat. Am I right? Most of the time I stick to a nut butter shot or froyo/ice cream, but I recently found these “healthier” cookies called Lenny & Larry’s The Complete Cookie at Publix and grabbed a few- Chocolate Chip, Pumpkin and Double Chocolate. These things are huge!

Lenny & Larry's the Complete CookieFrom their website: “This delicious Vegan cookie has no preservatives, no dairy products, no animal products, 16 grams of protein, 6 grams of fiber, 0 grams of trans fat, is kosher and all natural. We make seven incredible flavors; Chocolate Chip, Double Chocolate, Lemon Poppy Seed, Pumpkin Spice, Oatmeal Raisin, Peanut Butter and the new White Chocolate Macadamia.” They are a bit caloricly dense, with ~400 calories per cookie, but considering the high quality ingredients and added protein, I don’t mind. Plus, I only had half 😉

I am SO READY for fall! The heat/humidity and random crazy thunderstorms are getting to me. I heard Starbucks is coming out with their PSL soon. Hopefully the weather will follow suit 🙂 Fall is my favorite time of year… even if fall in Florida is almost non existent. Decorations and all the pumpkin foods make it more real, haha.     • Aww man, they don’t sit right with you? Shucks! Wonder whats in them that bugs you? I’ll have to live through you and your gorgeous pics for fall. We go from green to brown, haha.

  1. I cannot wait for all things fall – flannel, hot chocolate, pumpkin, apples finally being in season, and most importantly butternut squash lasagna – love that seasonal dish 🙂
