WIAW: 2nd and Last Maternity Edition

Sadly, I go back to work Thursday, ending my 3 month maternity leave. Booo!!! Here’s another look at my eats from a laid back day in the life of Heather and Kara…

Pre-Breakfast: Chicken Sausage. I’m really digging these for my 3-5AM feedings. I always wake up hungry and just want something little to tide me over. These sausages have minimal ingredients and taste great. I’ll brown up a bunch to keep on hand so I don’t have to whip out the skillet at 4AM. I usually end up going back to bed after this feeding.

1st Breakfast: Apple. I eat this while I’m nursing Kara- usually around 8. That way, by the time she’s done eating, I change her and we play a bit, it’s been an hour, she’s ready for a nap and I’m ready to run! Yes, I eat it to the core.

2nd Breakfast: Pancakes. 1/2 cup oats ground into flour, 1/4 tsp baking powder, 4 egg whites, vanilla, stevia, salt. I lucked out this day and was able to shower and make pancakes right before Kara woke up, so I ate these while nursing her. Followed by a spoonful of almond butter 🙂


Late Lunch: Mediterranean Quinoa Salad with Almonds and added chicken. I hate that this salad doesn’t come with chicken and you have to pay extra for it. BUT, it’s delicious and lunch was on my boss, as we were meeting to talk about my “comeback plan.”

I stayed after our meeting and fed her a bottle (still breast milk) so we could go to Target afterwards… I had to snap a selfie with my natural beauty 🙂

Snack: Sunchips. I grabbed a bag of Sunchips that I premake for Todd’s lunches to munch on while Kara played on her mat.

Dinner: Salmon, cauliflower rice, broccoli. I love salmon! I had a few bites of Todd’s brown rice, too, because it’s just too good to pass up.

Dessert: Nut Butter Shot and Dark Chocolate. I’ve been digging this combo- how could you not?!

I’m going to miss these lazy days with my girl! Don’t get me wrong, she keeps me busy, but it’s a kind of busy I don’t mind. Being a mom certainly is a full time job and it’ll be interesting to see how I adjust to/balance working, running and mom life. Wish me luck!

    • If only we lived in Canada and got a full year off, haha. The pancakes are pretty plain, but super clean and yummy with nut butter and a tad of maple syrup.
